Is there a website or document in which you describe classes such as StiDataSourceHelper and others?

Not all described in our documentation. Our product is a large and all aspects it is impossible to describe.
We are constantly improving videos and documentation and other supplement resources. It simply takes time.

Just to clarify, StiDataSourceHelper.GetUsedDataSourcesNamesList works with data sources, but is there something that works with specific columns and not entire data sources? Like if I wanted to show variables only if specific columns of a data source were selected, is there another tool for this?
